Why do you need salt to make ice cream?

This week we tried to make ice cream in our classroom without a freezer.  We put 1/2 cup cream, some sugar and vanilla essence in a small zip lock bag.  We put the small bag into a bigger bag filled with ice cubes and some salt.  We massaged the bags to freeze the liquid cream into solid ice cream.

Our experiment didn't work and we couldn't work out why we needed salt in the ice (as we knew that salt is used to melt ice).  We ended up putting our ice cream in the freezer overnight to help it to set. We ate it the next day and most of our class liked the taste :)

At the bottom of this post is a video that Mrs Trolle found that explains why we needed the salt. Watch it and see if you can now explain why salt is important.

ps. Kotuku class . . . I don't think we added enough salt to the bag!
